I had a 2001 elite 80 that was the same way. I had to let it warm up 2-3 min everytime I rode it, If you didn't let it warm up it would die out everytime you hit the throttle. And make sure you check the valves every 1000mi or so.

Looks to me like you are the take it out of the box and throw it together types. NOT AT ALL! It just might be for sale! whats wrong, you get great gas milage at 15mpg or maybe 30mi between your gas and oil/gas tank! LOL!!....that thing drinks gas!! Alot of helpful info around here on this one!
