I have a pipe that is supposed to be for that range.
It is too small for my 125cc and too big for my 86cc
It is a RDO pipe Maybe it would work for you.

jetting usually has more to do with the pipe than the bore size.
Your friend is right. The larger displacement, pulls more fuel though the same size jet.

I always wanted to build a 50 x 50
I think stroke and bore should be close to achieve high rpms.

Gears are 18x39s. I dont want to run anything lighter than 7gram weights... I think I put in 8s or 7.5s for the moment. Tires are dunlop S1, cant recall at the moment.... RPM, dont really know either, no tach.. I am dont mind flogging the engine, but not looking for a real high revving setup...

You would definatly be able to go 70-75 mph. Any faster than that is just silly.

If you were getting 68mph out of 8.4 gears you were turning approx 10k rpms.
Assuming your new 50x50 stroker can turn the same rpm's with 7.5 gears 75mph seems about right.
This chart assumes that your variator is maxed out at a 0.85:1 ratio
