I know our tires are 2.50x10. Could you put a 2.75x10 or 3.00x10 in the back? I would leave the front with the 2.50x10 to keep the speedo accurate. Seems to me that you'd get a higher top speed with a taller tire. Yes? No? Bad idea? Fitment?

i think that is width not height. if it is height there is not enough room for a taller tire. i dont think it would make that much difference anyway.

Unlike car tires, the first numbers (2.50) is tire width. The 10 designates the rim diameter. There is no ratio for height to width.
You're stuck with what you have.

Would a 2.75 or 3.00 fit on the rear?

2.75 squeezes on. A 3.0, I'm unsure.

Any benefit in running a 2.75 over a 2.50 or does Honda know best?
